Citrus Chicken…my twist on orange or lemon peppered chicken

Years ago my mother went on this fruit kick. She decided we hardly ate it at home so whenever she went to the grocery store she bought TONS of fruit. Eventually we couldn’t consume the fruit as fast as she was buying it. We had to get inventive. But there are only so many shakes and smoothies you can make before you get sick of it.

I decided to mix it up a bit. Trust me, you’ll be thanking me later!

First you will need….(This is the recipe for two)
One orange
One lemon
One lime

You’ll also need chicken (I used four pieces)
You’ll also 2/3 of a bell pepper and maybe 1/3 of an onion

Season your chicken with what you think will work.
I used salt, pepper, lemon pepper, accent, garlic powder and minced garlic.
Slice your fruit, bell peppers, and onion.
First I put a layer of the oranges, lime, lemon, onion and bell pepper in the pan.

Then place the chicken. (I always season one side of the chicken, place it in the dish and then season the other side)

After placing the chicken in the pan, place more oranges, limes, lemons, onions, and bell peppers.

Squeeze some lime, lemon, and orange onto the chicken, fruit, and veggies. (With the seasonings, all this citrus balances out. Trust me.)
Place the oven around 375. Make some rice, whichever kind you like. And after awhile check and taste the chicken.

This is the chicken when it’s done.

    @Tonya, yea, I’m trying to figure out a veggie version of this dish. Tofu doesn’t seem right. Hmmm. Maybe Tempeh. We will see! Take pictures of your fish version!
