Stuffed Tomatoes with Risotto, Ginger Carrots and Dill Bread
Two of my friends are extreme granolas. I love it. They participate in a CSA and make pies and grow their own herbs. I love it.
This Sunday along with making Apple Pie with Gouda Crust, they also made dinner. Laura picked up some tomatoes at a local store. They were beautiful and apparently on sale for very cheap.
The tomatoes were halved and scooped out. They were then stuffed with risotto that had been made the day before.
This picture just reminds me there is good in the world.
Along with the stuffed tomatoes, there was also gingered carrots and homemade dill bread.
